This project aims to question the lack of development of a herb growing and essential oil extraction industry in Ireland through the program of a herb market, herb distillery, herb drying and roof gardens on Cork City’s Coal Quay.
The scheme engages with the market tradition of Coal Quay and specifically the herb market that existed on the Quay from 1706 to 1888.
